Gozney’s highly anticipated Gozney Dome Bone with stand pizza oven, released to the public in 2021, sold out in 8 hours.
The dual fuel version, connecting to a standard 20-lb propane tank, offers the flexibility of gas or wood cooking, while the wood-only version is available. Capable of reaching temperatures up to 950°F, it promises exceptional performance.
Construction
The Dome by Gozney is a robust backyard pizza oven weighing 128 pounds and designed for stationary use. Constructed from ceramic-coated steel, it withstands outdoor elements while maintaining its aesthetic appeal.
Featuring ample insulation, it boasts superior heat retention and reduced fuel consumption. With dimensions resembling a compact Neapolitan oven, it comfortably accommodates a 12″ pizza on its floor. The spacious interior allows for easy manoeuvring of pizzas and pans.
Whether on the optional stand or a stable surface, the Dome offers versatility for various settings, from built-in backyard kitchens to mobile pizza trucks, catering to outdoor cooking enthusiasts year-round.
Inside the oven
The choice of material for a pizza oven floor is crucial, and the Dome’s floor is crafted from 30mm thick cordierite, a stone gba333 compound renowned for its durability and resistance to thermal cycling.
Cordierite, containing magnesium, iron, aluminium, and silicon, is less prone to thermal shock compared to traditional ceramic baking stones. However, Gozney advises curing the oven before initial use and gradually heating and cooling it to prevent potential cracks, offering valuable guidance.
Internally, the Dome presents dual fuel options, with the wood-burning area positioned on the right above the air intake. Gozney includes a removable stone puck for seamless fuel switching, with a round air intake screen provided to prevent large embers from falling into the ashtray beneath.
The ashtray, initially simplified due to manufacturing delays, allows for adequate air intake adjustment, ensuring control over the wood fire’s heat. Gozney plans to supply the knob-equipped ashtray once available.
The gas burner is situated on the left, covered by the stone puck when using wood fuel, facilitating straightforward fuel transition. Both systems reach temperatures up to 950°F, with intuitive heat control mechanisms.
An exhaust screen on the ceiling directs smoke and particulates up the flue, which features a rain guard and a removable rain cap for weather protection.
Assembly is minimal, requiring the insertion of the flue pipe into the exhaust outlet. The flue’s slight looseness is intentional, facilitating proper ventilation. Dome owners opting for wood fuel can enhance the flue’s effectiveness with an extension, aiding flame containment during high-wood-volume cooking.
In summary, the Dome’s thoughtful design incorporates durable cordierite flooring, dual fuel versatility, and efficient ventilation mechanisms, ensuring optimal performance for wood or gas-fired pizza cooking.
With attention to curing and gradual heating, users can enjoy reliable operation and exceptional culinary results, making the Dome a standout choice for pizza enthusiasts seeking professional-grade backyard cooking experiences. You may find reviews about this product on Twitter as well.
